Raise Your Spirits With Loaded Baked Potato Soup

Are cedar allergies making your life miserable? In need of some comfort food? Coming home to a steaming, hot bowl of Loaded Baked Potato Soup may not cure what ails you, but it sure will raise your spirits.

Serve as the main course or as a side dish to accompany a delicious pot roast.

INGREDIENTS:

  • 4 lg. potatoes, baked and cooled
  • 2/3 c. butter
  • 2/3 c. flour
  • 7 c. milk
  • 4 green onions, chopped
  • 1 can (15 oz) creamed corn
  • 1 pkg (12 oz.) bacon, cooked and crumbled
  • 1 ¼ c shredded sharp cheddar cheese
  • 1 c. sour cream
  • Galic, salt and pepper to taste

INSTRUCTIONS:

  1. Scoop meat of the baked potato out of the skin. Place in medium size bowl and set aside
  2. Melt butter in a Dutch oven over low heat
  3. Whisk in flour, a little at a time, until mixture is smooth
  4. Cook one minute, whisking constantly
  5. Gradually whisk in milk.
  6. Cook over medium heat, constantly whisking until mixture is thickened and bubbly.
  7. Stir in potatoes, creamed corn, and green onions; bring to a boil.
  8. Cover, reduce heat and simmer for ten minutes.
  9. Add crumbled bacon, shredded cheese, and sour cream.
  10. Add garlic, salt, and pepper to taste.
  11. Stir until cheese melts; sprinkle top with more cheese, bacon, and green onions.
  12. Serve immediately.
