Breaking With Tradition: San Antonio Smokehouse Rocks Texas Barbecue

Cooking with intention and passion, pitmaster Esaul Ramos was interviewed by Eater this spring at San Antonio’s 2M Smokehouse in the Texas Hill Country. The video was posted to their YouTube channel and is currently sitting at just shy of 350K views. His work is described in the video caption as “…breaking Texas tradition by bringing in flavors he grew up with. Ramos’ barbacoa, brisket, ribs, turkey, and sausage all draw from his Mexican heritage in their own way.”

In their post description Eater self-identifies as “…the one-stop-shop for food and restaurant obsessives across the country. With features, explainers, animations, recipes, and more — it’s the most indulgent food content around. So get hungry.”

Viewers of the video, some having also been to 2M Smokehouse, have nothing but excellent things to say about the food, in which Ramos clearly takes great pride. In the video, he notes that he previously worked under John Lewis, who was the pitmaster at LaBarbecue in Austin, also in the Texas Hill Country. It’s clear from Ramos’ dedication, enthusiasm, and the presentation of the meat with which he works, he knows a considerable amount about Texas barbecue and is very capable of incorporating his own cooking techniques and flares into the final product.
