Spicy Southwestern Stuffed Chicken is a Texas Crowd Pleaser

Want to spice up your chicken? Try Southwestern Stuffed Chicken. It is quick, easy, and really tasty — and your family will surely enjoy this dish! This recipe combines healthy chicken breast covered a with cheese cracker crumb mixture that will melt in your mouth.

Southwestern Stuffed Chicken

INGREDIENTS:

1 ½ cups crushed cheese crackers

2 Tablespoons dry taco seasoning mix

6 boneless, skinless, chicken breast halves

4 ounces Mexican-flavored processed cheese spread (or any type of cheese) cut into 6 cubes

1/3 cup butter, melted

INSTRUCTIONS:

Preheat oven to 350 degrees. Coat a six-cup muffin pan with cooking spray.  In a shallow bowl combine cracker crumbs and taco mix; set aside.  With a kitchen mallet or rolling pin, gently pound or roll chicken between two sheets of wax paper, about ¼ inch thickness.  Place cube of cheese in the middle of each chicken breast and roll up tightly tucking insides as you roll.  Brush melted butter then roll in cracker crumb mixture, holding chicken securely closed and coating all sides.  Place each rolled chicken breast seam down in its own prepared muffin tin.  Bake for 25-30 minutes or until no pink remains and juices run clear.  Serve immediately with rice or your favorite side dish.
