Summer Squash Fritters

3 cups Yellow Zucchini or a combo will work, (unpeeled shredded)
1 cup Cheddar Cheese, (grated)
1/2 cup Onion, (chopped)
1/2 cup Jalapeno or Serrano Pepper, (minced)
1 clove Garlic, (minced)
1 Egg
1 cup Bisquick
Grate the squash with a cheese grater into mixing bowl.
Add the cheese, onion, jalapeno, garlic and egg.
Mix together, then add Bisquick until it is almost a dry mix.

Heat oil in a skillet and drop spoon size amounts of the mixture into hot oil and flatten them into the shape of pancakes with the spoon.
Fry until golden brown and sprinkle with salt and pepper.
