This Peach-Blueberry Cobbler is a Mouthwatering Summer Treat

Make use of the seasonal treasure of nice, ripe peaches and blueberries. This delicious, mouthwatering Peach-Blueberry Cobbler recipe is a treat your whole family will love.  To add a little something special to this recipe, put some homemade vanilla ice cream on top.  Nothing beats the delicious taste of summer:  peaches, blueberries, and great, homemade ice cream.

Peach-Blueberry Cobbler

INGREDIENTS:

Filling

½ Cup granulated sugar

2 Tablespoons all-purpose flour

½ teaspoon grated lemon juice rind

¼ teaspoon salt

3 Cups chopped peeled peaches (Hill Country) (about 2 pounds)

2 Cups fresh blueberries

1 Tablespoon fresh lemon juice

Cooking spray

Topping

1 1/3 Cups all-purpose flour

1/3 Cup granulated sugar

½ teaspoon baking powder

¼ teaspoon salt

3 Tablespoons chilled butter, cut into small pieces

2/3 Cup low-fat buttermilk

1 ½ Tablespoons turbinado sugar

INSTRUCTIONS:

Preheat the oven to 400 degrees. To prepare the filling, combine the first 4 ingredients in a large bowl: granulated sugar, all-purpose flour, lemon rind, and salt. Add peaches, blueberries, and juice. Spoon the mixture into an 8-inch square baking dish coated with cooking spray.

Bake at 400 degrees for 15 minutes.

To prepare the topping, lightly spoon 1 1/3 cups flour into a dry measuring cup. Level with knife. Combine 1 ½ cups flour, 1/3 cup sugar, baking powder, and ¼ teaspoon salt, stirring with whisk. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add buttermilk and stir until moist.

Remove dish from the oven. Drop dough into peach mixture to form 8 rounds. Sprinkle dough evenly with Turbinado sugar.  Bake on 400 degrees for 25 minutes, or until bubbly and golden.
