For some, cheesecake is cathartic. It’s the dessert that allows you to sit with friends and vent over a coffee, or you can eat half of one by yourself in your bedroom watching reruns of the Golden Girls and never once feeling guilty… so we’ve heard. But here in Texas, we’ve taken in it to a whole new level with the creation of the Sweet Potato Cheesecake.

Shared by The Texas Chef, this dessert recipe incorporates the sweet potato into a dreamy delicacy you’re going to wish you made more of! Using the standard graham crackers and melted butter for the crust, the filling is a nice blend of cream cheese and all the fixin’s, with the unique taste of that root vegetable we’ve come to know and love as part of our traditional family dinners but in a different form. Many of our households will have roasted or baked sweet potato over Thanksgiving and Christmas. Some of us enjoy them as fries. But we think it’s safe to say the majority of us will soon have a passion for Sweet Potato Cheesecake.
