Quick Fixes to Thanksgiving Dinner Disasters

Overcooked, Dry Turkey
Slice the turkey, place the dry meat in a baking dish. Pour turkey or chicken broth on sliced meat, cover with foil and bake for ten minutes at 350 degrees. The broth will seep into the meat making it juicier.
Cold-Hearted Turkey
Turkey didn’t thaw all the way through? Cut it in half between the breast, season to taste and place it on a baking sheet. Roast until the internal temperature reaches 165 degrees. Don’t forget, white meat cooks faster than dark meat so remove the breasts from the oven sooner than the legs.
Dry Dressing
Mix melted butter and turkey broth in a bowl. Pour over dressing, cover with foil and bake until steamy – usually five to seven minutes.
Soggy Dressing
Spread it out on a cookie sheet and return it to the oven until it dries out a bit.
Thin Gravy
Blend equal parts of flour (or cornstarch) and turkey drippings (or broth) in a bowl to make a paste. Bring your gravy to a boil and stir in the paste until the gravy reaches desired consistency.
Lumpy Gravy
Dump the gravy into a blender and blend until smooth. Pour it back into a pan and return to a light boil.
Sticky Mashed Potatoes
Too much stirring can make mashed potatoes sticky. Turn them into cheesy mashed potato cups. Mix the potatoes with cheddar cheese and an egg. Scoop them into a muffin tin, sprinkle more cheese on top and bake at 350 degrees until tops are golden.
Lumpy Mashed Potatoes
Add a little bit of milk or butter and cook over low heat until the lumps soften.
Cracked Cheesecake or Pumpkin Pie
There’s nothing Cool Whip can’t hide. Just top your pie or cheesecake with Cool Whip topping to hide the imperfections and a touch of cool sweetness.
