Grilled Bacon, Jalapeno, & Pimento Cheese Sandwich

Now what’s not to love about bacon and cheese anything? But grill this yummy mixture, and it’s shut-the-back-door and pull-the-shades delicious! I like to use a good, crusty bread rather than white fluff. A firmer bread stands up better to grilling. And if you have a sandwich grill, all the better! Your family will proclaim you’re a genius.

Grilled Bacon, Jalapeno, & Pimento Cheese Sandwich

Ingredients and Instructions:

Heat oven to 400 degrees and place bacon on rack or on foil lined baking sheet, allowing two pieces of bacon per sandwich. Turn bacon half way through the browning process and drained on paper towels. My son-in-law says I ruin bacon. He loves it practically raw. Not me—I want that pig crispy.

Butter one side of your bread and spread with an ample helping of DiAne’s left-over pimento cheese.

Grilled Bacon, Jalapeno, & Pimento Cheese Sandwich

Spray skillet (I use an old iron skillet) and place slice of bread, buttered side down and cheese side up in skillet. Top with pickles jalapeno slices. I used five slices of jalapeno per sandwiches and nearly set my lips on fire. But did you know a taste of granulated sugar will put the fire out?

Arrange browned and drained bacon slices and top with the second slice of buttered bread.
