America’s Best Ramen is in the Heart of Hill Country

Recently, Time Out published a list of the best ramen restaurants in the United States. Ramen Tatsu-ya in Austin landed the first spot.

When Ramen Tatsu-ya opened in September 2012, it quickly became a household name in Austin with lines winding around the block. The  Austin American-Statesman reported that “two ex-DJs [Tatsu Aikawa and Takuya Matsumoto] opened Ramen Tatsu-ya.” The success of the first location led to the creation of a second location on South Lamar in January 2015.

So what’s the secret of selecting the best ramen in America? It’s Ramen Tatsu-ya’s broth that drew Time Out to select it as the best ramen restaurant in the country. The creamy yet light broth “requires three days’ worth of cook time, resulting in a luscious pork bone elixir that clings to each angel-hair-thin noodle.”

It seems that no matter what style of food Texas does, we do it well because we understand that cooking is really about patience. The slow cook and simmer methods are tried and true in every kind of food popular in the Lone Star State.

Perhaps the best part of Ramen Tatsu-ya are their cheeky rules, which include: chopsticks only; slurp loudly and shamelessly; and never share your ramen.
