A Sweet Blueberry Treat for Everyone at Your Table

Springtime is here and summer is on the way, and nothing tastes better than a delicious fruity dessert! This recipe for blueberry salad is a real winner with blueberry lovers and easy to make, too. Great served as a side or as a dessert, this is an ideal dish for a potluck or picnic.

Blueberry Salad


2 small packages of cherry or black cherry gelatin mix

2 cups boiling water

15 ounces of fresh blueberries (substitute: 1 can (15 ounces) blueberries, or 15 ounces frozen berries)

1 package (8 ounces) cream cheese softened

½ cup sugar

1 teaspoon vanilla extract

1 cup sour cream

¼ cups pecans (optional)


In a large bowl, dissolve gelatin into 2 cups of boiling water, stir until completely dissolved. Add in blueberries and stir.  Pour into 11×7 dish, chill until set.  In large bowl, beat softened cream cheese and ½ cup sugar until smooth.  Add vanilla and sour cream, mix well.  Spread layer of cream cheese mixture over set gelatin.  Sprinkle with pecans if desired. (You can substitute with more blueberries or other fresh fruit.)  Chill several hours.
