Best Chocolate Cake Ever: Espresso Chocolate Cake

INGREDIENTS:

For cake:

2 cups all-purpose flour

2 cups sugar

¾ cups unsweetened cocoa powder

2  teaspoons baking powder

1 1/2 teaspoon baking soda

1 teaspoon salt

1 teaspoon espresso powder

1 cup milk

½ cup vegetable oil

2 eggs

2 teaspoons vanilla extract

1 cup boiling water

 

Chocolate Buttercream Frosting

1 ½ cup butter (3 sticks) softened

1 cup unsweetened cocoa

5 cups confectioner’s sugar

½ cup milk

2 teaspoons vanilla extract

½ teaspoon espresso powder

INSTRUCTIONS:

Instructions for Cake

Preheat oven to 350 degrees.  Prepare two 9- inch cake pans with baking spray or butter and coat with light coating of flour.  In large bowl add flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder.  Strand  through mixture until well combined.  Add milk, vegetable oil, eggs, and vanilla extract to flour mixture and mix on medium speed until well mixed.  Reduce speed of mixer and carefully add boiling water to cake batter.  Beat on high sped for about one minute.  Spread batter equally into two cake pans.  Bake 30-35 minutes.  Use a toothpick to test the cake to see if it is done.  When cake is done, let cool.  After cake is cooled, frost with delicious, homemade Chocolate Butter Cream Frosting.

NOTE: Cake batter will be very thin after adding boiling water, this is the correct result!

 

Instructions for Frosting

Put cocoa into large bowl, strand  through it to make sure all clumps are out.  Cream together butter and cocoa powder until well mixed.  Add sugar and milk. by adding one cup sugar followed by 1 tablespoon of milk at a time.  Repeat until all sugar and milk have been added.    Add cocoa mix on high speed until mixed well.  Add vanilla and espresso.  Stir or mix well.

If frosting looks a bit dry, add one tablespoon at a time of milk until preferred consistency.

If frosting looks a bit we, add one tablespoon at a time of confectio ner’s sugar until preferred consistency.
