It’s football season, folks! And, who doesn’t love a great go-to recipe for some nachos? Here’s a little recipe to whip up for family and friends for those riveting Sunday afternoon football watch parties.
A quick and easy recipe with some of this Hill Country writers’ favorite ingredients to create a delicious snack to serve your guest is sure to get you and your football buddies raring to go. Choose your favorite brands from the items below to make your dish more unique. Goya products in the recipe below to give it a personal touch of my favorite products, but any brands will do.
Black Bean Nachos
Prep time: 10 minutes
Total time: 15 minutes
Ingredients:
1 can of your favorite black beans
1 can of corn
1 package of ground beef sirloin
Your favorite spices ( to season meat)
Bag of tortilla chips
1 Jar of salsa
1 Medium tomato (finely chopped to about 1 cup)
1 Avocado (finely chopped to about 1 cup)
Shredded Mexican cheese
Scallions ( 1 cup chopped up)
Jar of sliced jalapeño peppers
Pico de Gallo, for garnish (Optional)
1 Safe oven proof dish
Directions:
Heat oven to about 325 degrees F.
Brown your ground beef and add spices.
In medium saucepan heat black beans, stir in half jar of salsa, and add corn over medium to low heat.
Arrange tortilla chips on your oven safe dish. Spread meat mixture over chips evenly. Spread bean mixture on top of meat mixture evenly. Sprinkle cheese evenly over entire dish. Bake for about 5 to 7 minutes.
Serve immediately with additional toppings of avocado, tomatoes, jalapeño peppers, scallions, and pico de gallo if desired. Makes about 10 servings.
