Expressive ‘Brushstroke Cakes’ Are the Newest Pastry Craze

Though imitators are popping up right and left, Russian bakery Kalabasa is most well-known for their expertly made “brushstroke cakes.” The expressive cakes have gained popularity on Instagram where the bakery now has over 80K followers who are in awe of their amazing work with pastries.

Food & Wine says that the shapes are most likely made from chocolate or candy melts painted onto wax paper and dried. The brushstroke shapes allow for colorful versatility on the cake. It’s almost like using paint swatches to make gorgeous color patterns, making it easy to match any occasion or location. Kalabasa carefully attaches each delicate piece to a cake or cupcake, giving the pastries interesting side and top views that are worthy of multiple photographs.

According to Bored Panda, the bakery’s translation of the “brushstrokes” comes closer to “painted chocolate feathers.” When the organic-looking shapes are put together in a cluster, they do resemble the plumage of an exotic bird.

The only problem with the cakes is expressed over and over in the comments section of Kalabasa’s photos. “It’s too beautiful to eat!” people exclaim. But if their cakes taste anywhere near as good as they look, anyone not digging into the pastry is clearly missing out.
