Easy-Peasy Strawberry Lite Cake for Your Valentine
Okay, ladies, Valentine’s Day is headed this way, and it’s time to make that man of yours smile. Cook his favorite meal and top it off with this easy-peasy delight of a cake. Strawberries are known to add love to the air, and our Texas Hill County ruby red pleasure will set the stage for you.
The brilliant color makes this an ideal cake for July 4, as well as Christmas. But today, we’re thinking Valentine’s. This cake of love has fewer calories than most desserts, yet it looks beautiful and tastes scrumptious. The aroma alone is enough to make him hug you. He’ll think you slaved all day making this delight just for him. Shhh! We won’t tell him it took you about 15 minutes of prep time. That’s our secret. Happy Valentine’s Day!
Easy-Peasy Strawberry Lite Cake
From the Kitchen of Gay Lewis
Ingredients
4 eggs
2/3 cup Vegetable oil
1 6 oz package sugar-free strawberry Jello
1 sugar-free white cake mix
½ cup water
Strawberries to garnish
Directions:
Combine first five ingredients in order given. Save strawberries for garnish. Bake at 350 degrees for 45 to 50 minutes in a greased and floured Bundt pan. Thoroughly cool before removing from pan.
Options:
1. Drizzle with white icing.
2. Serve a slice on a plate with a side of whipped cream and garnish with strawberries. Or…
3. Cut a slice of cake into chunks and layer into a parfait glass or Trifle bowl, alternating layers of cake, whip cream, and strawberries.
However you serve it, your sweetie will love it.
