Hearty Cowboy Quiche, Breakfast of Texas Champions

Breakfast is the most important meal of the day, and what better way to satisfy a big appetite than with a hearty cowboy quiche?  Made with your favorite breakfast ingredients: bacon, eggs, and cheese; this is a great meal to give you plenty of energy to start your day right. Of course, Cowboy Quiche can be served any time of the day.

Cowboy Quiche

INGREDIENTS:

1 whole unbaked pie crust

2 yellow onions, sliced

2 tablespoons butter

8 slices of bacon

8 whole large eggs

1 ½ cup heavy cream or half-and-half

Salt and pepper to taste

2 cups shredded Cheddar Cheese

bell peppers or jalapeno peppers can be optional to spice things up a little

INSTRUCTIONS:

Preheat oven to 400 degrees. Fry onions in butter in large skillet over medium-low heat, stirring occasionally until golden brown.  Set aside to cool.  Fry bacon until crispy.  Chop into large bite-sized pieces and set aside to cool.  Roll out pie crust and press it into large fluted deep tart pan or deep dish pie pan.  Whip eggs, cream, salt and pepper in large bowl then mix onions, bacon, and cheese.  Pour mixture into pie crust.  Place pan on rimmed baking sheet.  Cover with aluminum foil.  Bake for 40-45 minutes.  Uncover quiche and place into oven for 10 more minutes or until crust is golden brown.  Remove from oven and let sit for 10-15 minutes, filling might seem a little liquid like at first but will set while cooling.
