Wintertime naturally causes us to crave “comfort foods,” and one of my all-time favorite comfort foods is cornbread. Whether it’s mama’s old-fashioned cornbread, a mix kit, or one like this that’s hearty and can be made into a meal all by itself, cornbread is just one southern staple that has so many uses and good memories.

Ingredients:
1 cup yellow cornbread mix
1 cup milk
2 eggs, beaten
¾ teaspoon salt
½ teaspoon baking soda
½ teaspoon bacon drippings or salad oil
1 can cream style corn (17 ounces)
1 lb. ground beef
1 lb. cheddar cheese, shredded
4 jalapeno peppers, chopped
1 onion, chopped
Instructions:
Combine in large mixing bowl cornbread mix, milk, eggs, salt, baking soda, and bacon drippings or oil, and cream style corn. Set aside corn batter.
Brown ground beef, drain, and set aside.
Pour ½ of corn batter into greased 13X9 pan. Sprinkle grated cheese onto layer of corn batter. Crumble ground beef over cheese. Sprinkle chopped jalapenos and onions over beef. Pour remaining corn batter over top and bake at 350 degrees F for 40-45 minutes.
