How to Make Corn with Chili Lime Mayo + Cotija Cheese
In case you haven’t tried it, “Elote” is delicious. That’s just Spanish for Mexican-style grilled corn, topped with delicious chili lime mayo & cotija cheese. But there’s a right way and a wrong way to do it so that you get the best results and have a delectable dish for all your dinner guests. INGREDIENTS:
Corn on the cob, boiled in salted water for 5 minutes, drained
Melted butter, to taste
Grated cotija cheese, to taste
Generous 1/2 cup mayonnaise
1 tbsp ground ancho chili powder
1 tsp smoked paprika
Fresh lime juice
Salt to taste
INSTRUCTIONS:
- Make your chili mayo by taking a whisk to the mayonnaise, chili powder, paprika and lime juice.
- Refrigerate until needed.
- Melt a half stick of butter, either in the microwave or direct sunlight
- Boil the corn for 5 minutes
- Place the corn cobs on a hot grill, and roll the corn until it’s caramelized.
- Brush the melted butter onto your corn.
- Brush the chili lime mayo shamelessly onto your grilled corn.
- Grate cheese over the corn, generously to taste.
