How to Make Corn with Chili Lime Mayo + Cotija Cheese

In case you haven’t tried it, “Elote” is delicious. That’s just Spanish for Mexican-style grilled corn, topped with delicious chili lime mayo & cotija cheese. But there’s a right way and a wrong way to do it so that you get the best results and have a delectable dish for all your dinner guests. We encourage you to try this recipe from the folks over at Food Wishes.

INGREDIENTS:

Corn on the cob, boiled in salted water for 5 minutes, drained
Melted butter, to taste
Grated cotija cheese, to taste
Generous 1/2 cup mayonnaise
1 tbsp ground ancho chili powder
1 tsp smoked paprika
Fresh lime juice
Salt to taste

INSTRUCTIONS:

  1. Make your chili mayo by taking a whisk to the mayonnaise, chili powder, paprika and lime juice.
  2. Refrigerate until needed.
  3. Melt a half stick of butter, either in the microwave or direct sunlight
  4. Boil the corn for 5 minutes
  5. Place the corn cobs on a hot grill, and roll the corn until it’s caramelized.
  6. Brush the melted butter onto your corn.
  7. Brush the chili lime mayo shamelessly onto your grilled corn.
  8. Grate cheese over the corn, generously to taste.
