Kickin’ Central Texas Slaw That Packs a Flavorful Punch

This version of Central Texas Slaw is as gorgeous to look at as it is yummy to eat, and it packs quite a kick! As far as slaw recipes go, many people will have a favorite or a “go-to.” In trying this colorful dish, you’ll not only add zing to your plate but a jalapeno zest that makes your mouth water. You may want to have a cold beer handy to ensure you can slake your thirst and cool down the old taste buds, but you won’t regret the addition of the cilantro into the mix that helps this recipe provide the perfect complement to a chicken or rib dish. This Central Texas Slaw will be a hit at any barbecue, or as a side dish to bring to a potluck!

Central Texas Slaw That Packs a Flavorful Punch

INGREDIENTS:

  • ¼ cup white vinegar
  • ¼ cup extra virgin olive oil
  • 2 tbsp. sugar
  • 3-4 tbsp. fresh lime juice
  • 1½ tsp. kosher salt
  • ½ tsp. ground coriander
  • ¼ tsp. ground cumin
  • ¼ tsp. ground red pepper
  • ¼ tsp. freshly ground black pepper
  • 2 cups thinly sliced red cabbage
  • 2 cups thinly sliced white cabbage
  • ½ cup shredded carrot
  • 1 medium thinly cut jalapeno, with seeds
  • ½ red bell pepper, thinly sliced
  • ½ yellow bell pepper, thinly sliced
  • ½ cup chopped, fresh cilantro

INSTRUCTIONS:

Whisk together the first 9 ingredients in a large bowl. Add the red cabbage, white cabbage, shredded carrot, jalapeno pepper, and the red and yellow peppers. Toss to coat. Chill for approximately 1 hour before serving, tossing occasionally. Stir in the chopped fresh cilantro just before serving.
