The crazy looking red flap of skin over the turkey’s beak is called a snood in reference to a headband at one time worn by women in Scotland. Hunting reduced turkey populations to very low levels by the early 1900’s, but the establishment of hunting seasons for the birds and restocking brought the number of birds back up. The heaviest turkey taken by a hunter in Texas is 30.5 pounds; the spurs on the turkey’s legs and the beard are also measured for scoring points. To hear a turkey gobble, click here.
