Mouthwatering King Ranch Casserole
King Ranch Casserole

INGREDIENTS:
1 tablespoon vegetable oil
1 large green bell pepper, diced
1 cup chopped onion
2 cloves of garlic, minced
1 can cream of chicken soup
1 can diced tomatoes with green chilies
1 to 2 tablespoons chili powder (depending on your spice tolerance)
12 corn tortillas cut into ½ inch strips
4 cups diced cooked chicken
2 cups shredded sharp Cheddar cheese
INSTRUCTIONS:
Preheat oven to 350 degrees. Coat a 9×13 baking dish with cooking spray. In large skillet over medium heat, heat oil. Sauté bell pepper, onion, and garlic for four to five minutes or until tender. Stir in cream of chicken soup, diced tomatoes and chili powder. Cook until warmed. Line bottom of baking dish with ½ inch tortilla strips. Top with sauce and cheese. Repeat layers. Bake for 30-35 minutes or until bubbly and hot. Top with your favorite garnish: onions, peppers, or extra cheese!
