Pecan Pie Shortbread Cookies

INGREDIENTS:

Cookie Ingredients:

1 cup brown sugar, packed

¾ cup unsalted butter, softened

1 egg

1 teaspoon vanilla extract

2 cups flour

1 teaspoon baking powder

 

Filling Ingredients:

1 cup Pecans chopped

½ cups brown sugar, packed

¼ cups whipping cream

1 teaspoon vanilla extract

INSTRUCTIONS:

Preheat oven to 350 degrees. Line 2 baking trays with parchment paper, set aside.  In large bowl, beat brown sugar, butter, egg, and vanilla extract until creamy.  Add flour a baking powder into mixture and mix well.  Shape dough into 1 ¼ balls and place on baking tray setting 2 inches apart from each cookie dough ball.  Make an indention on each cookie with your thumb or back of a spoon.

PREPARE FILLING by mixing chopped pecans, brown sugar, whipping cream and vanilla extract in a small bowl.  Fill each cookie indention with filling with a teaspoon.  Bake for 8-12 minutes or until lightly brown.  Cool for one minute before removing from cooking sheet.  Enjoy these great cookies with a glass of milk or your favorite beverage.
