Satisfy Your Texas-Size Hunger with Quesadilla Pie
Quesadilla Pie

INGREDIENTS:
4 large flour tortillas (9-10 inches in diameter)
Butter
½ pound grated cheese, either mild or sharp cheddar of Monterey Jack
Beans, cooked (black beans or pinto beans)
Tomatoes, chopped
Onions (green or red onions)
Cooked shredded chicken, pork, or beef
Jalapeno peppers
Cumin or chili powder for extra heat
INSTRUCTIONS:
Preheat oven to 350 degrees. Butter bottom and sides of pie dish (10-inch Pyrex). Place one tortilla on the bottom of the pie dish. Sprinkle some shredded cheese over tortilla. At this point begin to add filling (beans, tomatoes, onions, chicken, pork, beef, peppers and chili powder). Add second and third layer, repeating the process. Add tortilla on top; spread a little butter over the surface of the top layer. Cover dish in aluminum foil, put in oven at 400 degrees. Cook for 15-20 minutes. Cool for 10 minutes then cut into quarters. Serve with avocado, shredded lettuce, cilantro, and sour cream.
