You can use prepared pico de gallo or make your own fresh. This is surely a recipe that will reel in your family and friends and satisfy that shrimp craving. Shrimp Stuffed Avocados

INGREDIENTS:
1 Tablespoon olive oil, extra light
12 ounces medium pico de gallo
2 ½ cups medium shrimp, peeled and deveined
1 cup water
2 medium avocados
INSTRUCTIONS:
Heat a large skillet over medium heat for 2 minutes. Add olive oil, pico de gallo, shrimp, and water. Stir, reduce heat and cover. Cook 10 minutes or until shrimp is cooked. Cut each avocado in half and remove seed. Scoop avocado pulp from the skin, keeping skin intact. Place pulp in a mixing bowl and set avocado skin aside. Fill each avocado skin with shrimp mixture and top with avocado. (4 servings)
