East Texas Crawfish season is in full swing, and it appears that all the crawdad lovers in the area have been impatiently waiting to get their hands on some of those little critters. In an interview with an ABC News affiliate, Taylor Alston of Lufkin said, “I personally know people that have been waiting since November, just waiting for crawfish season to come.”

Adam’s Crawfish Shack, also of Lufkin, has had many requests, shares, and likes on their Facebook page, simply generated from interest in when the season would fully be underway. One of our personal favorite comments was simply, “Crawfish, get in my belly!!!” And fans of the East Texas crawfish restaurant were quite happy to hear Adam’s Crawfish Shack would be opening earlier than their typical timeframe this year due to weather conditions of late. “In December, we had warmer weather so that allowed them to grow bigger and I think that’s why Adam was able to open earlier this year,” Alston further commented.

Some of y’all call them crawdads, crayfish, and mudbugs, but for the most part, they’re simply “crawfish.” Regardless of being swamp, pond, or spillway crawfish, these East Texas beauties have been a delicacy for some their whole lives, and many love the tradition of a crawfish boil in the spring. A healthy food, crawfish are an excellent source of high-quality protein, are low in saturated fat and calories, and are a good source of vitamins. You can find them at many local restaurants, but often, in season, local supermarkets will sell boiled crawfish by the pound, not to mention the many seafood markets in East Texas where you can purchase them live (also when they’re in season of course.) There are even several online dealers in both East Texas and Louisiana to purchase some!

So, if you’re looking forward to another great crawfish season in Texas in 2017, check out the local restaurants both online and on social media, or visit them directly to see for yourself! Many will feature live entertainment, local talent, but most of all, they’ll feature those gorgeous, juicy, and just a little bit spicy, East Texas crawfish. Enjoy your boil, etouffee, bisque, pie, fried, jambalaya… you name it, it’s good!
