Texas Beef Taco Casserole
INGREDIENTS:
PAM Original No-Stick Cooking Spray
6 ounces of dry extra wide noodles, uncooked
1 pound ground beef (80% lean)
2 cups frozen Southwestern mixed vegetables (corn, black beans, and red peppers)
10 ounce can diced tomatoes with green chilies, undrained
10 ounce can red enchilada sauce
1 ¼ cups water
1 ¼ cup shredded Mexican blend cheese
¼ cup thinly sliced green onions
Sour Cream (optional)
INSTRUCTIONS:
Preheat oven to 400 degrees. Spray 13×9 inch glass baking dish with PAM. In large skillet, brown ground beef. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet, stir. Bring to boil. Pour mixture over noodles. Cover dish tightly with foil, bake for 15 minutes. Stir, sprinkle with cheese and cover with foil and bake 10 more minutes or until noodles are tender. Sprinkle with green onions. Serve with sour cream if desired.
