It’s been a mystery and a question on the minds of many hungry people—why doesn’t Chipotle have queso? According to WFAA, the company’s chief marketing officer, Mark Crumpacker, said, “Queso is something that’s been requested from us for many, many years. Pretty much since we started. “Now, Chipotle is finally caving into the requests and offering their new queso dip at their test kitchen location in New York City.

Writers at Buzzfeed stopped by the test kitchen to try an order of the new queso. The taste tester from Texas said that while the amount of spice was just right, the texture was a bit grittier than she was anticipating. It wasn’t exactly the smooth queso she was used to having with a Tex-Mex meal.

“When you compare it to the more synthetic ones, it’s got a different texture. But it’s melted cheese, and that’s what actual cheese tastes like,” Crumpacker explains. Since Chipotle only uses 60 all-natural ingredients, “potato starch and tapioca starch” are the “key” to making the new queso, which gives it its unique texture that many people might prefer.

The company is also testing frozen margaritas (with alcohol and one without), a new salad, and cinnamon-covered sweet buñuelos which come with a pepper chocolate sauce.
