Homemade Texas Hill Country Peach Ice Cream

Nothing beats the taste of homemade peach ice cream, well, except for homemade peach ice cream made with peaches from the Texas Hill Country. This is a sweet, uniquely Texas treat that is sure to please your family and friends. This easy recipe combines the taste of creamy vanilla with fresh Texas Hill Country Peaches that will satisfy that summertime sweet tooth.

Be sure to visit the Hill Country’s many peach orchards in Fredericksburg, Stonewall, Round Mountain, Blanco, Marble Falls, and Mason. This treat is good by itself or on top of Texas Hill Country Peach Cobbler.

Homemade Peach Ice Cream

INGREDIENTS:

1 cup sugar

1 cup milk

1 egg beaten

3 1/3 cups heavy whipping cream

¼ cup instant vanilla pudding mix

1 ½ cup (or more)  finely chopped TEXAS HILL COUNTRY PEACHES

2 teaspoons vanilla extract

INSTRUCTIONS:

In large saucepan, combine sugar, milk and egg. Cook over low heat until mixture is thick enough to coat metal spoon (about 160 degrees on cooking thermometer). Stirring constantly, no not allow mixture to boil. Remove from heat. Quickly transfer to large bowl, place bowl in pan of ice. Stir gently for two minutes. Press plastic wrap over custard, refrigerate for several hours.

Stir cream, pudding mix, peaches and vanilla into custard. Fill ice cream cylinder 2/3 way full.  Freeze according to ice cream maker’s directions.  Freeze 2-4 hours until ice cream is firm.

Yield:  1 ¼ quarts.
