A Quick and Easy Smoked Sausage Dinner

Let’s face it, some days those phones don’t stop ringing, the deadlines don’t top coming in, and the people just get on your bad side. Then you have to go home and worry about those hungry kids that want something to eat right now. Well, we can help. This delicious dish is quick and easy to make on the nights you would rather do something than be cooking. It combines sausage, rice, and broccoli for a really well-rounded meal that will keep your family happy and free up you evening time to unwind.

Easy Smoked Sausage Dinner

Smoked Sausage Dinner in Skillet

INGREDIENTS:

1 package Hillshire Farm smoked sausage, diagonally sliced thin

2 cloves garlic, crushed

¼ cup olive oil

1 large red bell pepper, sliced thin

1 small yellow onion, sliced thin

1 package frozen broccoli, thawed

½ cup chicken broth

½ cup tomato sauce

2 cups instant rice

½ cup shredded Mozzarella cheese

INSTRUCTIONS:

Heat olive oil and garlic in skillet, stir in smoked sausage slices and cook until browned. Add pepper, onion, broccoli, broth and tomato sauce and simmer for 10 minutes until the vegetables are tender and the liquid is absorbed.  Prepare rice according to package directions.  Stir rice into the skillet, sprinkle with cheese and serve.
