Step Back Into Grandma’s Kitchen With These Orange Ice Box Cookies

The name tells you this is an old, old recipe. A vintage family recipe, these slice and bake cookies are easy to mix up as something tasty to have on hand to serve to unexpected guests.

Orange Ice Box Cookies

INGREDIENTS:

1 cup of sugar

1 cup of brown sugar

1 cup of real butter (softened)

1 cup of chopped nuts (optional)

2 eggs well beaten

1 teaspoon  baking soda

1 teaspoon baking powder

4 cups of flour

1 teaspoon vanilla

1  medium sized orange squeezed (use as much juice as you’d like from the fruit and also put in grated peeling to taste.)

1 teaspoon salt

INSTRUCTIONS:

Blend together as any other cookies or cake. Chill before baking.

Prepare two pieces of waxed paper and put a little flour on them.

Knead and roll dough into approximately 1 1/4 inch diameter rolls. Wrap in between the two pieces of waxed paper; chill at least 3 hours (or overnight if sealed in foil or plastic bags). Once chilled, slice the rolls into 3/16 inch thick slices. Place slices 1/2 inch apart on greased cookie sheets. Bake in a preheated 375-degree oven for 7 to 9 minutes or until golden but not brown.

They can also be frozen and cut into portions as wanted.
