These Sweet Nothin’s Melt in Your Mouth

These sweet little dumplin’s are a product of my Mama’s imagination, but y’all know me—had to change them just a bit. Sorry, Mama! She piped her cookies log style—I prefer a dollop. I also added just a touch of peppermint.  Everyone loves peppermint and chocolate—right?

Ingredients:

(This is a double recipe…makes about 3 dozen cookies)

4 egg whites

1 ½ cups sugar

2 pinches salt

1 ½ cups miniature chocolate chips

1 cup chopped nuts

¼ teaspoon peppermint extract

Instructions:

Heat oven to 325 degrees.

Whip egg whites and salt ‘til foamy, add sugar and continue beating ‘til very stiff. Add peppermint extract and whip another few seconds.

Fold in chocolate chips and nuts.

Spoon by teaspoons full onto baking sheet lined with parchment paper.

You will need to use two baking sheets and they must go into the oven at the same time. Please cookies in oven and turn off heat. No peeking. Leave in oven ‘til cool…and I’m thinkin’ they should really be called Angel Kisses…melt-in-your-mouth delicious! Let’s change the name! Happy New Year!
