Summer will soon be here and if you’re anything like me, you’re already plotting when to have your next cookout, including wonderful southwestern flavors such as steak tacos and salsa! (Well, actually, I don’t need a cookout to crave these bad-boys, but just thought I’d throw that in there for appearances!). Bringing a little bit of Texas flair to my table, I usually can’t (and don’t) wait for #TacoTuesday to roll around before chowing down on this dreamily easy dinner.
In the thick of the summer, this great recipe from MyRecipes can get you through the hot days where the Texas sun just doesn’t seem to let up, and you’re wanting to eat outdoors in the shade, instead of a stifling kitchen. If you’re doing the steak on the grill, even better! You can char the tortillas as well, adding an additional touch of outdoor cooking flavor. The tangy kick of the salsa (maybe throw in some added cilantro, some guacamole, a beer, some wine,…wait, where was I?) is delicious with a capital D.
